Restaurant Roux is located in the old Buckaroo Tavern space. Matthew Lewis, the proprietor of the popular Where Ya at Matt food truck, had his eye on the space which had been vacant since the fall of 2010. Mētis was initially brought onto the project by the shell and core contractor to take the project from drywall to completion.

Elsewhere there is wood, beautifully grained, pieced and polished. A marble-topped bar lies to the left, the kitchen to the right. A U-shaped counter embraces both, with tables and big booths arranged around the perimeter.
